Menu plan ~ Week 1

It has been an extremely long time sense I have done a menu plan & sense I made one this week, I thought I would share it with ya’ll! :) I am also going to do this weekly in hopes that I get better at knowing what I’m making ahead of time and also trying & sharing new recipes! :)

These are just dinners.

- Pork Chops
- Homemade mashed potatoes
- Corn
- Rolls

No recipe to go with it this time. I really think I need to share my homemade mashed potato recipe though because it is delicious!

Easy Peasy Chicken Sandwiches part 2

I have another chicken sandwhich recipe to share with you.
Take your leftover chicken and cut it into bite sized pieces (or make new chicken either way work). 

Place it in a microwaveable bowl and sprinkle it was a good amount of shredded cheese. 
Heat in the microwave for 15 seconds.

Toast two pieces of bread in your toaster on a low setting until it’s done. Spread mayo on it (or your condiment of choice)


Put as much of the chicken/cheese mixture on your bread as you want, place the other piece of bread on top and wa-la. Enjoy. :)


It’s my new favorite go to lunch meal and to be honest I like it more than the first easy peasy chicken sandwich recipe.

Happy Birthday & A recipe

First. 
Happy Birthday to my wonderful mother!

Second,
I have an easy peasy recipe for you today.
We normally tend to have leftovers of whatever I make for dinner the night before. Most of the time Hubby takes the leftovers to work to eat on his lunch break and sometimes there is still some leftover even after that. So I’m always trying to find new things to do with said leftovers.

One of my favorite things to make recipe wise is anything with chicken! 
I heart chicken ridiculously! So, this is how easy peasy chicken sandwiches came about!

Easy Peasy Chicken Sandwiches!
You will need.

1. Bread
2. Left over chicken.
3. Mayo.

Yep that’s it. 

1. Heat your left over chicken up until it is slightly warm. 

Cut into bite size pieces if it isn’t already, it makes it easier for the next step.

2. Put your chicken pieces into a chopper or mixer of some short and turn it on! You will wind up with this!


You can heat it up a little bit more here if it’s not warm enough to your liking. 

3. Put your mayo on your bread.


4. Scoop one to two spoonfuls of chicken onto bread.

5. Put your other slice on top and enjoy! =D

Chicken was on sale this week and we happen to love chicken. So that’s why there is alot of it in our dinner this week. =D

How about a recipe?

Butter chicken

Ingredients
2 eggs
1/2 tsp garlic salt
4 boneless skinless chicken breasts
1 Cup crushed saltine crackers
Ground black pepper
1/2 Cup butter, cut into cubes

Directions
1. Preheat oven to 375 degrees F (190 degrees c)
2. Place eggs and cracker crumbs in two separate bowls. Mix the cracker crumbs with garlic salt and pepper..
3. Dip chicken into the eggs, and then into the crumb mixture to coat
4. Arrange chicken in a 9×13 inch baking dish. Place pieces of butter around the chicken.
5. Bake in the preheated oven for 40 minutes, or until chicken is no longer pink.

What I plan on making this week

Well today I plan on slowly getting back into doing things around the house and activities with the kids. =D I didn’t cook all week long, it was a nice break, but I missed home cooked food, so I plan on cooking alot this week, so today’s post is my menu plan for the week, because I never thought I would be this happy to cook again. This is my first time doing a menu plan Monday, woo hoo! There is two snacks listed each day. They don’t have to eat them, but they are available if they get hungry in between meals. I plan on doing this every Monday and I’ll be sharing some recipe’s throughout each week, so get ready for that. :)

Queso for summer parties

As you know, Summer is coming up fast. You did know this right? Ok, just checking. I don’t know about y’all, but I’m planning tons of BBQ’s and outdoor parties this summer and I can not wait! There is also many party’s being planned by my family and friends as well! Well, I thought I would share one of our favorite queso dips, that is perfect for a summer party. It’s simple, it’s quick and it’s delicious. :)

I only used half the ingredients because my crock pot is small. But for a normal size crock pot. You need.
1 lb Hamburger meat
1 Can Rotel (we use mild)
1 Block of Velveeta

1. Cook the Hamburger meat in a skillet until done. Drain when finished.

2. Turn your crock pot on High and put the cooked hamburger meat in.


                               
                                                             3. Pour in the can of Rotel

4. Cut the Velveeta into cubs and place in crock pot. Put the lid on and cook until Velveeta is melted.

This is where I have to apologize. It finished right as American Idol was coming on. Therefore I was too busy watching Idol and stuffing my face to remember to take the finished picture. But I promise you it was delicious!

It’s a perfect day

 For Relaxing and Baking. It’s rainy, and rainy weather makes me want to do nothing. It sucks the energy right out of me. I’m a sun kind of girl. But, I’m in the mood to bake. I found some great recipes from Bake at 350. I have been following Bridget’s blog for a little while now. She is such a talented woman and her recipes look so yummy. I mean seriously, look at these.
Adorable! Well, I decided to try out a couple of her recipes today and many more in the future. I made 1-2-3-4 peanut butter cookies. They are soo yummy.

You only need four ingredients! I’m getting ready to eat alot of these. But, I tried one already and oh. my. gosh. They are yummy! I also plan on baking Vanilla-almond sugar cookies today too. Make sure you head over to Bridget’s blog and show her some love. :)

Alot to blog about

Be prepared for a long post. :) For I have alot to share.
We finished doing numbers 1-10 with Jay. We would do the 1 through 10 flashcards, which I blogged about in this post. I was going to post all of the pictures 1-10 that he scribbled colored. But, that would be alot of pictures so I’m only going to post 1 & 10, because I’m sure you will get the picture. :)

Now that we have finished one through ten. We are moving onto ABC’s. I made flash cards and we worked on the letter A.

He is super excited about learning the ABC’s. :)
My roses are in full bloom, well some of them. I love looking out my back window at them though. He puts a huge smile on my face, they are so pretty.

The boys had a blast playing outside the past two days while we did yard work. :)

KJ was all smiles and Jay was mad that we turned off the water hose.


My hubby put the boys sandbox together and put sand in it, they loved it. Also, I love dressing the boys alike. I think it is absolutely adorable. :)
We took a trip to Sam’s club yesterday. I found the most perfect thing for my shopping/cooking.

Isn’t it adorable? I fell so completely and utterly in love with these colors, that I am going to do my kitchen in them. :) I did some re arranging and it now has a permanent spot on my kitchen counter.

I also want to share a very yummy recipe. It is one of our favorite meals.
Mozzarella Chicken
Ingredients:
1/2 Tbl olive oil
4 Boneless skinless chicken breast
1/2 Tsp. black pepper
1/2 Tsp. Minced garlic
1/4 Cup mined onion
1/2 Cup chicken broth
4 Cups ragu sauce
1 Cup shredded mozzarella cheese

Directions:
1. Heat oil in a large skillet over medium high heat. Saute chicken 4 to 5 minutes or until white.


2. Add pepper, garlic, onion and broth.
3. Cover and simmer over medium heat for about 7 to 10 minutes.

4. Stir in sauce. Cover and simmer for another 10 minutes.
5. Sprinkle with cheese on top of chicken, cover and cook 2 to 3 minutes.

We had a wonderful weekend. My husband’s mom took My hubby, myself, Jay, and KJ shopping. It was nice to get spoiled. :) Then Saturday night hubby & I actually got to go out with some friends. It was alot of fun. Today we ran a few errands, did some yard work and had lots of family time. I loved this weekend. :)
